This lot is processed using a semi-anaerobic natural method, where freshly picked cherries are fermented for 84 hours in jute bags inside cement tanks.
After fermentation, the cherries are sun-dried on raised African beds for 33 days, allowing the beans to absorb the fruit’s natural sugars and flavours.
This careful processing results in a sweet, vibrant, and deeply layered cup, celebrating the best of Ethiopian coffee craftsmanship.
