Background Information
This standout Java coffee is grown on Finca Las Flores, a pioneering farm located in the renowned coffee region of Acevedo, Huila. The Java variety, originally introduced to Indonesia in the 19th century, is prized for its resilience against disease and its exceptional cup quality. In Colombia, it's quickly becoming one of the most exciting cultivars for high-elevation specialty coffee production.
What makes this lot so captivating is not just the variety, but the precision fermentation behind it. The process begins with selective hand-picking and a 36-hour oxidation period in tanks. Cherries are then floated in water treated with a 5% alcohol solution to ensure microbial cleanliness—a key step in this high-fidelity fermentation.
From there, the cherries are de-pulped and undergo 60 hours of anaerobic fermentation inside sealed bags with mosto (juice from the same variety). This step enhances the intensity and complexity of the citrus flavour notes. The fermentation is abruptly halted using a unique hot-and-cold water quenching process (50°C followed by 20°C), which helps to lock in the volatile compounds that contribute to the coffee’s vibrant aromatics and layered fruit notes.
The beans are then dried in a stainless-steel hermetic dehumidifier over 36–40 hours until they reach optimal moisture (11%), followed by a full week of stabilisation—ensuring a clean, stable, and intensely expressive cup profile.
