Behind the Scenes at Project One Light
Project One Light (POL), founded in 2021 by Yunnan native Olina Cai, is at the forefront of specialty coffee innovation in China.
Their team, made up of Q-graders and processing experts, is driven by a mission to elevate Yunnan coffee while maintaining sustainability and ethical practices.

For Peach Oolong, POL meticulously selects ripe cherries from the high-altitude Mangshi region, known for its exceptional terroir.
The cherries then undergo anaerobic fermentation with yeast, where temperature and humidity are carefully controlled to preserve and enhance the coffee’s natural attributes.

Following fermentation, the beans are dried on sun-drying shelves for two weeks, allowing the perfect balance of time, sunlight, and innovation to shape their vibrant flavours.
The result? vibrant expression of innovation and tradition, brought to life through the magic of anaerobic natural yeast fermentation.
